Good morning. Anyone have any good bargains this year?

I slept in. I did the 5am thing last year (actually, I was up at 4 to get there for 5 last year).

My SIL and BIL went to get a $1200 TV for $697 this morning, after much joking. My BIL was NOT going to stand online half the night, wasn't happening. They got there a few minutes before 6am, and the store had already opened -- but there were FIVE TVs just sitting there on the floor.

My SIL has been pricing these things for months and she was planning on buying it after the Super Bowl, but you couldn't pass this up.

As for me, I might try to get a Pennsylvania Flyer train set later today from Linens & Things. (This is the time of year where there's heavy emphasis on the "things" part of the name). They're supposed to have them for a decent price, plus there's a coupon.

If I get it, I'll probably try to sell my Navy train set. It's a little too big for the small display that I have room for. Last year I didn't have room at all in the living room near the tree.

I work 11am to 8pm today (retail) so will post this recipe and then get going here (almost finished w/ my green tea so am finally waking up):

Pecan Pie Muffins Recipe

1 1/2 cups chopped pecans
1 cup firmly packed brown sugar
1/2 cup all-purpose flour
2 large eggs
1/2 cup butter, melted

Combine first 3 ingredients in large bowl; stir together. Make a well in the center of mixture.

Beat eggs until foamy. Stir together eggs and melted butter; add to dry ingredients, stir just till moistened.

Place foil baking cups in muffin pans and coat with cooking spray. Spoon batter into cups, fill two-thirds full. (Foil baking cups available at the Party Store.)

Bake at 350 degrees 20 minutes or until done. Remove from pans immediately and cool on wire racks.

Yield: 9-12 muffins

Recipe can be doubled.

Breakfast or dessert.

Notes: Mini-Muffins
* made 36
* baked 15 minutes
* used foil cups, filled cups almost full.

More notes:
Day before Thanksgiving, I melted the butter in my cast iron skillet, mixed up all ingredients in a bowl and then baked in the already greased from the melted butter cast iron skillet, for 20 minutes. Came out real well that way. Joya

Sour Cream Turkey Enchiladas

2 tablespoons olive or canola oil
1 cup finely chopped onion
3 cups cooked, shredded turkey (the dark meat is best)
1/2 teaspoon salt
2 cups (more if you like & I add in a bit of cheddar for color)shredded Monterey Jack cheese

12 corn tortillas
1/2 cup oil

1/4 cup butter
1/4 cup all-purpose flour
2 cups chicken broth
1/2 teaspoon salt
1/4 teaspoon white pepper
2 cups sour cream
(1 4-ounce can) chopped green chiles

2 tablespoons chopped cilantro or green onion
Preheat oven to 375°F. Spray a 9x13-inch baking dish with cooking spray.

The Filling: Sauté the onion in the oil just until softened. Add the shredded chicken, sprinkle with the salt, and toss to combine. Set aside and allow to cool. Add the shredded Monterey Jack Cheese and mix thoroughly. (I add a bit of the sauce to the mixture to make sure they are moist)

The Tortillas: Soften the corn tortillas by Heating the oil in a skillet and, using tongs, dipping each tortilla for 15 seconds in the hot oil, letting the excess drip back into the skillet. Drain the softened tortillas on paper towels as they are cooked.

Place an equal amount of the turkey mixture on each of the 12 tortillas, roll them up and place them, seam side down, in the baking dish.

The Sauce: Over medium heat in a saucepan, melt the butter, add the flour, and stir vigorously with a wooden spoon for a minute or so. Gradually whisk in the chicken broth, and cook until mixture thickens and bubbles. Reduce the heat, or remove from the burner, and stir in the sour cream and green chiles. Do not allow sauce to boil, but gently heat through.

Pour the sauce evenly over the tortillas in the dish, and bake for 30 minutes at 375°F. (You can also top with more cheese if you like then finish with the green onions or cilantro)
