Lesley University is not nearly so isolated, but it has the same mandatory policy about its student cafeteria. There was a problem however. Several students had Celiac disease. They needed to eat gluten free in order to not get sick.
So naturally they told the college and the college allowed them an exception to the mandatory cafeteria plan, letting them keep the money and use it to buy gluten-free food off campus. Right?
No, the students sued the college to mandate that the college accommodate them. I don’t feel sorry for Lesley because, frankly, I still bear a grudge against all colleges that use this business model so that students are forced to pay for services they don’t want on condition of being a student. (Of course, that was the organization’s choice. I never dreamed of suing over it.) Now it has turned into a big expense because the only way to provide economical food is to be able to buy in bulk and mass produce the meals. That is no longer possible. Lesley University did not even fight for their right to determine what food they will provide. They caved and made the following concessions:

At 3.5% of the population, folks with adverse reactions to wheat gluten would constitute over 1,000 students!
At that level the conversion to a gluten acceptable meal system would be remarkably inexpensive.
First rule at breakfast, don't cook the potatoes or eggs in the same part of the grill they cook the pancakes. Second rule, for prepared potato products, buy those with a cornmeal separator rather than one that uses wheat flour.
Lunch ~ make gluten free bread available ~ just available ~ sandwiches, etc. can be easily swapped out. Supper ~ cornmeal pasta and brown rice pasta, or rice. Fish ~ buy unbreaded product that can be broiled, grilled, or poached .
There's nothing real expensive here plus you'll save a fortune in toilet paper AND water that no longer needs to be flushed.
Celiacs are usually not all that picky. They don't want to eat what you eat, just give them something to eat. Manys the time all I've found edible in a restaurant with a family gathering was rice. I learned to like rice. Now if we could get those Chinese restaurants to carry butter! BTW, I always check the taco shells. Many of the ones used in commercial establishments stick wheat flour in the mix to stiffen them up for American expectations ~
BTW, beans and rice are OK but there are these yahoos who think they ought to beef up the flavor with barley, and thicken the bean sauces with wheat flour. Then it’s not beans and rice! oh, Dirty Rice is not just rice ~ everything has to be checked.
Oh goodie, I am allergic to strawberries, mango and all sea food, and peppers...does this mean I get to sue restaurants?/S
There is a very good Chinese restaurant here in Aiken County, SC that wanted to advertise their gluten free meals. However, their Engrish got in the way and their boast was printed as, “Glutton-free meals.”

The captive student meal plans are a problem for folks who cannot eat most of the food that is served. Taking their money or meals even though you understand they’ll need to eat elsewhere is basic THEFT
Seems to me it’s pretty upfront standard legal beagle stuff to not poison your customers. Are you suggesting that someone who is poisoned by someone else should not have legal recourse?

I no longer eat out at all. Too risky. I get the standard symptoms PLUS eczema.
Up until not long ago I had no problem with bread or cake made with red wheat flour. It's low in gluten ~ or it was ~ either my sensitivity increased or they've added more gluten genetically.
The biggest problem I have is not using a different set of pans for the stuff that MIGHT be gluten free ordinarily. And the invariable sauce thickeners. I cook from scratch at home. It’s the only way I’ve been able to completely eliminate my eczema. I took meds for years for that. It’s finally gone. No meds in 2 years.
I dont know what is going on. These allergies never existed when I was a kid. Maybe the liberal food supply chemical and conspiracy theories have some merit. Or they could be hypochondriacs.
Some of the moms who are convinced their kid is allergic to airborne nuts are flat out wrong.
Smart grandmothers upon noticing a baby having trouble with wheat, would switch to rice or oats. Lots of folks survived.
The thing is celiac or gluten intolerance has some defining characteristics and it can be tested for genetically .
Recent advances in breeding wheat with higher protein content have something to do with this. Whereas older cultivars may have had had little of the peptide that causes the problem, now wheat is brimming with those peptides and it has become poisonous to a certain part of the population. This was all accomplished through traditional breeding techniques. We hope they can use frankenood technology to snip out the poison from the genome.

He's never had this before so he was worried there's nothing to eat. I reminded him there's rice, oats, tapioca, corn...... a whole world of stuff.
Oh, there’s plenty to eat. Just not much pre processed or eating out food. The gluten free processed stuff is good although spendy. I like the Kinnikinnick(sp) donuts. Those are good. Spendy but good.
I have to agree. If you can’t eat the food, don’t EAT THE FOOD.
How difficult is that?
If the college caf had let me out of the mandatory meal ticket I’d have jumped at the chance.
Instead, these morons are SUING to eat crappy college caf food. What idiots.
