We call the “smaller” ones chicken. They are much much better eating than the big ones. The meat is not as grainy.

I think the best fish I ever ate was flounder which we gigged out of Choctawhatchee Bay. My friend coated them with flour instead of corn meal and to my surprise it was better that way. We did deep fry them.
There used to be a place in Pensacola which served a cheap but delicious mullet platter. When they got it just right they were about as good as it gets.
Their pull strength is vastly out of proportion to their weight. If it wasn’t for someone having a hold of my belt a 37 lb Amberjack would have pulled me over the railing at a time I weighed about 130... my feet were dangling in the air.
Hope she kept the cheeks, they are by far the best.

Take about a 5 pound flounder, after gutting and scaling cut an X on the fleshy side, peel back the meat from the spine, fill with a crab stuffing and bake at 350 for about 45 minutes, absolutely heaven.
