BBQ v. Grilling: What's the Difference?

What exactly is the difference between barbecue and grilling? Some people think barbecue is a sauce, or anything that comes off the grill, but technically, barbecue is a method of cooking just like grilling is. The only difference is the length of time and the amount of heat.

I hesitate to reveal this secret of chip soaking , but here goes.Put the wood chips in a pressure cooker for about an hour before putting on fire. They are nearly tender enough to eat and smoke forever

Okay, this is something I sorta know something about (or think I do). Last year, I entered the State Fair of Texas competition for BBQ sauce (and who cares about anywhere else). I finished a surprising third: surprising because it was my first BBQ sauce recipe.

PM me and I’m quite willing to exchange last year’s BBQ sauce recipe for something you created and like.

They have an excellent BBQ sauce, if only I could find a retail store to ship it to me. Either that or I’m gonna have to travel there and stay with you for a week.

I've used a Weber Summit grill for a decade plus. Most used equipment in our household! I use it year round two or three days a week. The smoke is done with one of those small cast iron boxes sitting on the left side burner - never have used the chips smoker that came with the grill. Indirect hear after searing. I soak the chips - various kinds of wood - only if I'm cooking something a long time, otherwise soaking isn't needed. I use the Weber for everything that isn't "long-smoked." Steaks, chicken pieces, lamb steaks, etc.

For BBQing I've got a Traeger grill. Great for pork butt, baby back ribs, whole chicken, turkey, beef brisket, etc. Easy, low and slow. I use a variety of dry rubs, spray with a mop sauce, carefully watch the temperature with meat probe. Allow for a lot of time.

Wow, that is an awesome achievement.

I am not into sauces all that much. Maybe on brisket, but I hate to add anything to drown the flavor of ribs or a good steak.

The Warden puts A-1 on my steaks. I hate her, I’d kill her but she’s way too skinny to cook up very well ;)

I have a Weber Platinum, one step down from the Summit. The smoker box is on the left side under the the grill top. It slides in and out (back to front). My problem with the Weber gas grills is that you cannot get them low enough on heat. With the back two burners orr and the front one set to low, I can’t get any lower that 300 deg. The wood chips start to char and burn in the front of the box and nothing happens in the back of the box. I don’t do ribs on the Weber anymore.

I bought a Traeger Model 100 Pro. It is a pellet smoker. Has a pellet reservoir box on the left. Pellets are fed into the center by an auger. Has precision temp control. I can get it down to 170 deg. Temp is regulated by how fast the pellets are fed and burned. It is the best in the world for smoking meats. Pellets sold in 25lb bags and come in all popular wood flavors. Pricey as hell though. 5 years ago, mine went for $1200. Not for the faint of heart or budget minded. I can’t believe we are 50+ posts in and no one has mentioned Traeger.

Too late. I’ve already told my unemployed brother in law and he and his four children are planning to join us in staying with you. We’ll hitchhike then take the Greyhound and should be there by mid July. Ever see that first Vacation movie?
