A Few of FR's Finest....Every Day

ired of all the hype about low carb diets, low carb menus, low carb packaging, low carb this, low carb that...?
"Go to a dinner party these days and you'll probably meet both carbohydrate boosters and carbohydrate haters. For carbohydrates have once again become a battleground in debates about healthy eating. They're what you're supposed to fill up on when you cut down on fat, says one side of the table. Or they're what's making Americans fat, according to the other side."

To heck with carbs, to heck with dieting...we haven't had a thread about food in a while, so let's go for it! Rich foods, comfort foods, healthy foods (if you really MUST), Grandma's recipes, family favorites.....

I'll start with one of *my* favorite comfort foods - potato soup that makes your tummy smile; potato soup that warms you from the inside out; the only potato soup I ever make. Put your favorite bread mix in the bread machine, and 'supper' is done.



  • 2 stalks celery, sliced
  • 1 medium onion, chopped
  • 2 TBLS butter
  • 5 chicken boullion cubes
  • 6 potatoes, peeled & sliced
  • 2 carrots, sliced
  • 3 cups water
  • 1/2 tsp thyme
  • 3/4 tsp salt
  • 1/2 tsp Rosemary, crushed
  • dash pepper
  • garlic
  • 2 cups milk
  • 1 cup shredded cheese
Saute celery and onion in butter. Add everything except milk and cheese. Cover and simmer until done. Remove from heat and mash the vegetables. Add milk and cheese and stir constantly until cheese melts and everything is hot. Enjoy! (The second bowl is the best. It also tastes better when you're in your jammies curled up by the fire, watching "Casablanca" or some other old movie on TV)   :)


               


You'll need dessert of course, and we can handle that, too. (Dansy and all you other chocolate lovers, you're gonna love this!)

Below is probably my favorite *To Die For* cookbook; the recipes and pictures are enough to make one drool, but the presentation alone is entertaining and fun to read ... sort of like Forrest Gump, himself, wrote it.




Among the mouth-watering selections included in the "Creamy Creations" section are:

"Feathery Chocolate Souffle"
"Bubba's Chocolate Cake Pudding"
"Paddle Wheelin' Parfait"
and *THIS* one, "Chocolate Decadence"!



  • 16 (1 oz) squares semisweet chocolate
  • 2/3 cup butter
  • 5 large eggs
  • 2 TBLS sugar
  • 2 TBLS all-purpose flour
  • 2 cups fresh raspberries
  • 2 cups water
  • 1/4 cup sugar
  • 2 TBLS cornstarch
  • 2 TBLS water
  • Whipped Cream
  • Garnish: fresh raspberries
~ Line the bottom of a 9-inch springform pan with parchment paper; set aside.
~ Combine chocolate and butter in top of a double boiler; bring water to a boil. Reduce heat to low; cook until chocolate melts.
~ Place eggs in a large mixing bowl. Gradually add chocolate mixture to eggs, beating at medium speed with an electric mixer 10 minutes. Fold in 2 tablespoons sugar and flour.
~ Pour batter into prepared pan. Bake at 400o for 15 minutes. (Dessert will not be set in center.) Remove from oven; cover and chill thoroughly.
~ Combine 2 cups raspberries, 2 cups water, and 1/4 cup sugar in a large saucepan; brig mixture to a boil over medium-high heat. Reduce heat, and simmer 30 minutes, stirring occasionally. Pour raspberry mixture through a wire=mesh strainter into a bowl; discard seeds. Return raspberry mixture to pan.
~ Combine cornstarch and 2 tablespoons water; add to raspberry mixture. Cook over medium heat, stirring constantly, until mixture comes to a boil; boil 1 minute, stirring constantly. Cool completely.
~ To serve, spoon 2 to 3 tablespoons raspberry sauce on each individual dessert plate; place wedge of chocolate dessert on sauce. Top each wedge with a dollop of whipped cream. Garnish, if desired. Yield: 10 to 12 servings.




How about one more, also chocolate, but not from Forrest Gump; it's a family favorite and a family tradition; we have it every year at Christmas, and it never fails to get ooh's and ahh's. One year I accidentally put red food color in the batter, mistaking it for vanilla extract! It was very ... PINK! ... when I cut into it! LOL



CAKE (Oven 350o - 30 minutes)
  • Beat 9 large egg yolks until light & thick. Add 1 1/4 cup sifted granulated sugar, beating well after each addition.
  • Beat 9 egg whites until stiff and moist; fold into yolks; add 1/2 teaspoon vanilla.
  • Fold in 3/4 cup sifted regular flour and 3/4 teaspoon baking powder.
  • Bake at 350o for 30 minutes in three 9" layer pans. DO NOT GREASE! (I line the bottoms with waxed paper, cut to fit the pans.)
  • Cool completely by inverting pans and propping one edge up a little; otherwise they will fall a bit.

FILLING & FROSTING
  • Cream 1/4 pound butter with 1 cup sifted powered sugar.
  • Add 2 squares melted chocolate that has cooled.
  • Beat in 1 egg at a time, beating on high. 3 should be used, but check after 2nd. Frosting will NOT harden or thicken.
  • Frost first layer with part of chocolate - THICK
  • Whip 2 cartons heavy cream (add sugar & vanilla to taste)
  • Frost second layer with cream - THICK
  • Frost sides with rest of chocolate, and the top layer with cream.
  • Garnish with chocolate leaves, chocolate sprinkles, or sprinkle cocoa or cinnamon lightly on top. Freezes well.

I do the low carb all day, but not No carb and not high fat. I mean I just cut out the donuts, fries, chips, cookies, etc. But my son wanted a burger yesterday so I had one without guilt. To me that is a diet. Just try to eat healthier, low fat, broiled meats, fresh fruits and veggies, whole grains most of the time. But if you want brownies or cheesecake Go For It. I made cheesecake marbled brownies last weekend. Double recipe. They are already gone. I love your recipes. I will try them.

Morning, buffy! Ooooh, those brownies sound so good! They wouldn't last long around here either. LOL!

Actually, we all know that eating healthy and keeping the calories down keeps *us* healthy, but it is nice to splurge once in a while. :) I'm glad you stopped by today.

cover The army of Alexander the Great was advancing on Persia. At one critical point, it appeared that his troops might be defeated. The soldiers had taken so much plunder from their previous campaigns that they had become weighted down and were losing their effectiveness in combat.

Alexander commanded that all the spoils be thrown into a heap and burned. The men complained bitterly but soon saw the wisdom of the order. Someone wrote, "It was as if wings had been given to them-they walked lightly again." Victory was assured.

As soldiers of Christ, we must rid ourselves of anything that hinders us in the conflict with our spiritual enemy. To fight the battle effectively, we must be clad only with the armor of God (Ephesians 6:11-17).

The Bible also likens Christians to runners. To win the race, we must "lay aside every weight" that would drag us down and rob us of our strength and endurance (Hebrews 12:1). This weight may be an excessive desire for possessions, the captivating love of money, an endless pursuit of pleasure, slavery to sinful passions, or a burdensome legalism.

Yes, if we are to fight the good fight of faith and run the spiritual race with endurance, the watchword must be: Off with the weight! -Richard De Haan

Billie this is a wonderful thread today. I'll bet there will be many posts - fancy & easy recipes... It will be a save & bookmark one for me I am sure. I will do the potato soup today. Being a BORING vegetarian, it will be sin the chicken broth..
