GILMER — Broad areas of grazing land at Pete Gipson's farm bear plow-like scars. But it's no out-of-control machine that's left disjointed ruts and holes amid long grass ripped from the earth.

He and other ranchers and farmers in Texas and the South are waging an uphill battle against herds of voracious feral hogs. The beasts, up to 3 feet tall and 400 pounds, devour feed intended for livestock and tear up pastures at his 300-acre Red Cap Farms in their search for food.

Here in East Texas they are EVERYWHERE. However, we have a cure. 165 grain soft-point boattails at 2775 fps administered from point blank range to 300 yards. Then fire up the smoker!!

I’m sure a lot of us would volunteer to go help him with his problem. Wild pig, free range, naturally fed, no hormones or antibiotics ... my mouth is already watering.

Exactly! I know a lot of people don’t care for the venison that’s donated to feed the hungry but, Hey, this is America’s other white meat.

Florida has 2 types of these critters: there’s the pure Spanish feral pig (which most people don’t even recognize as a pig - it has tiny legs and a dark shiny coat, although the boar can be quite big and menacing); and then there’s the Yorkie, the big pink British pig. I once simply had to sit and wait for 20 minutes while a huge herd of these things emerged from the swamp and snorted its way across the road.

They’re both destructive, of course, and hunting is a great idea (it used to be liberally permitted in Florida). However, my son hunts pig from time to time and says the wild ones are awful eating.

We’ve got Javalinas and feral pigs.

I have seen a Russian boar out near the S. Llano river in Junction. I’d say about 6 or 7 hundred lbs. with foot long tusks. Scary as hell.

You gotta get the smaller ones. The bigger ones I’ve heard are just BAAAD even if you like pork. But I have heard that the ones less than 100 lbs are good eatin’.

I’ve also heard that it depends on what the critters are eating — I would suppose if the pigs are eatin a bunch of swamp crap, than they would be likely to taste like crap, but if they are eating grass and open range greenery then they are good. I intend to put the theory to the test at some point...

Nice when you can test a theory with a Weatherby .270 and a New Braunfels smoker as lab tools.

Anything up to 40-50 pounds we skin, remove the head, use a good dry rub and smoke for 9-11 hours. I like either mesquit or hickory. I use a smoker with a water pan so it keeps the meat moist as well.

Shoot the small to medium ones as they are the best eating or shoot a sow. I shot a big boar (250 lbs) two years ago, the meat was NOT good.
