Scientists Discover Why Olive Oil Lowers Blood Pressure

The secret to the Mediterranean diet may be in the salad. Eating unsaturated fats, like those in olive oil, along with leafy greens and other vegetables creates a certain kind of fatty acid that lowers blood pressure, scientists said Monday.

These nitro fatty acids are formed when consuming spinach, celery and carrots that are filled with nitrates and nitrites, along with avocado, nuts and olive oils that contain healthy fats. Nitro fatty acids appear to inhibit an enzyme known as soluble epoxide hydrolase, which regulates blood pressure, said the research in the Proceedings of the National Academy of Sciences, a peer-reviewed US journal.

I use olive oil for everything...buy the big jugs at Sam’s. My blood pressure runs low; considering I am older, a little overweight (was a lot overweight until I changed my eating habits but still slowly losing) and a smoker it always baffles doctors. My bp is low, my cholesterol is low, sugar numbers are good. I am not on any special diet but I eat a lot of nuts, avocados, a lot of vegetables and do eat carbs but not many. I eat mostly grilled meat (mostly beef) and vegetables, some fruit but not a lot- fish about once a week, chicken once a week, Mexican food once a week, beans and eggs nearly every day. I eat butter not margarine, sugar or honey- no artificial sweeteners. I don’t eat processed foods or fast food, very little pasta. I don’t eat bread or sweets unless I bake them myself.

We use a lot of olive oil and drink the canary seed milk everyday.

I thought nitrates and nitrites were bad for us, like in bacon & hotdogs. I remember a Nova about their link to esophageal cancer. Vitamin C helps counter it. The episode showed a town in China where even the chickens got esophageal cancer. Seems the soil lacked something to give the crops Vitamin C. They amended the soil, did preventative screening and changed lives. I always tell my family to have juice or such with Vitamin C when having hot dogs or bacon.
