Get series about HEALTHY, and LOW CARB FOOD

This, and future threads, will attempt to answer some of your questions and requests regarding HEALTHY food in general, and LOW CARB, LOW CALORIE diets and recipes in particular.

With my background as a Master Chef, and Natural Foods Sexonutritionist, aka SexyChef  (/dreamer) Bwhahaahahahahah, it affords me a wonderful vantage point to assist in creating this forum, where everyone can contribute, exchange ideas and voice their valuable opinions. Moderating in no way qualifies me as an authority on this, or any other subject.*..heheheh ..that has never inhibited me before.. blush

There are many other FReepers, (you know who you are.. LOL) on this amazing site that have a great deal more detailed knowledge and information on specific topics, that will no doubt emerge. Sooooooo, lets get started..

My pleasure! Let me know how it turns out. I was a little worried the first time because tomatoes naturally have some sugar in them but the next morning my keto stix were as purple as could be, so I know it's safe on Atkins. When I found out I was diabetic my husband bought some sugarfree ketchup that was awful. It actually tasted skunky. I threw it away. But this is pretty decent and you can always adjust to suit yourself. I hope you enjoy your shrimp cocktail. };^D)

Good idea to have spicy hot snacks followed by much water. Multo bene!

I try to follow the Zone diet: very little starch, nothing with wheat, not even many potatoes. Only meat, fish, fruits, veggies. I sneak in some rye krisp. So boring. Thank God for Tobasco sauce, a staple at my house.

Here's a recipe I copied from the Washington Post ..have not tried it yet, but it does sound yummy and fits nicely into the Zone guidlines. You think it has possibilities?

Rib-eye with Plum Sauce

For the rib-eye steaks:

3 garlic cloves -- peeled
2 plums, pitted -- and cut up
3 tablespoons bottled steak sauce
2 tablespoons olive oil
1/4 cup red vermouth
4 boneless rib-eye steaks, -- 6 oz each

For the plum compote:

1 small onion -- finely chopped
2 tablespoons olive oil
4 plums, pitted -- and cubed
1 tablespoon lime juice
2 teaspoons chopped fresh ginger
1 tablespoon bottled mango chutney
1/4 cup apple juice
2 tablespoons fresh cilantro leaves -- chopped

Prepare a charcoal fire.

For the rib-eye steaks, puree, in a blender or food processor, the garlic, plums, steak sauce, olive oil and vermouth. Pour over the steaks, cover and refrigerate for 20 minutes. (The beef can marinate for up to 3 hours.)
For the plum compote, cook the onion in the oil in a small saucepan over low heat until softened, about 5 to 6 minutes. Combine the plums, lime juice, ginger, chutney, apple juice, cilantro and onion mixture in a small mixing bowl; set aside. When the coals are white-hot, grill the marinated steaks for about 6 minutes on each side for medium-rare meat, or longer if desired.
Transfer the steaks to a platter and spoon the fruit compote over each steak.
Note: The same amount of chicken broth or apple juice may be substituted for the vermouth. (Chicken broth better for Zone dieters than that sweet stuff.)
Per serving: 493 calories, 23 gm carbohydrates, 84 mg cholesterol, 285 mg sodium, 40 gm protein, 25 gm fat, 6 gm saturated fat

I haven't heard of it, but that holds very little sway. There are hundreds of new, and I might say improved, sweeteners in the market today, and many more on the drawing board. I have pinged a pro on this stuff. (That is the magic of FReeRepublic, you are only a ping away from the state of the art, in any subject...Swoon)

For most people, if I understand the research correctly, most people get into a carbohydrate craving (like nicotine craving), where it starts with an orange (real simple, right?) and then, shortly later, they get another orange, or some chips, or a soda. At some point (within the hour) the blood sugar begins to shift, causing more cravings. (begin the horrible cycle)

By having the carbs cut out (and relying on the proteins/fats) the body is forced to either burn the fats from the foods and then the body before it begins to burn the proteins consumed.

Sure, most people would be fine with an orange, or the leaner cut of beef, but the people who are doing Adkins (or even the South Beach diet) need the calories that the fats and proteins supply to supplant the empty calories from the carbs. (like the refined sugars and flours.)

I've been doing this research for my parents for the last couple of years. They are both diabetic, and I'm in a huge disagreement with the ADA's guidelines for the "consistent carbohydrate" diet. I think it's still way too high in the carbs to be a benefit for anyone except those who already have their BS levels under tight control. In my parents' case, his is not under control, while my step-mother is (when she is getting consistent exercise daily!) She can handle having some carbs (in her case, she loves fresh fruit, and when her sugar levels are reasonable, she can handle it without problem). For my father, I am trying to convince him (still, after years!) that he needs to eat the higher protein diet, and cut back on the "nutritional" snack foods he does eat (like Nutragrain bars, and Cheerios cereal). I know he won't, and it'll end up killing him.

I don't have any recipes to contribute because I'm a very timid cook - the kind of person afraid to try to cook something new.

But tonight, I did have hummus for the first time. It was a pleasant taste to add to my roasted chicken. A milestone !!

One good thing about Atkins is that you don't have to go hungry. Have boiled eggs, cheese, hot dogs handy. Bacon and eggs are always good in a pinch.

I love roasting my own chicken, and I know mine is juicy without brining the (dang)) bird. Add some steamed broccoli and homemade cornbread for me, and I'm happy!

I've learned a couple things from my vegitarian diet...

first, vegitarians are skinny little things that can run and run... and once you chase them down, the meat, what there is of it, is kinda stringy.

I think I'm too late to do the Dr. Atkins diet.

Do you realize how hard it is to find a doctor named Atkins any more? LOL

I've been reading old (70's) diet and lifestyle books lately ... Adele Davis, Dr. Pritikin, Dr. MacDougal, etc. ... it's really quite eye opening as to what arguments can arise from diet issues. and still it continues...


my problem is sitting at a desk... I used to eat endless bags of David and Son sunflower seeds, but to keep my BP down, I've cut out adding salt... there isn't much that is: low salt, low fat, low sugar... that you'd actually *want* to eat as a "snack" that I can think of
